Keto Meatballs

I originally found a meatball casserole recipe over on a neighbor's blog and fell in love with it. After the third or fourth time making it, I decided to make some modifications to make this super keto lunch or dinner entree more my style and to my tastebuds. Not a fan of so much garlic? Cut it back. Want more, well, we should be friends. Feel free to use fresh parsley, we just never seem to be able have it on hand when I want to make meatballs. Everything else is 99.9% of the time already either in the fridge or in the pantry making this a go-to for us. Serve with a salad to make it even better for you.

Some Tips

  1. Don't overcook the meatballs. When they overcook, they get dry and they just aren't as good.
  2. Even my picky eater husband will eat these if you chop the onions fine enough.
  3. I love to make these on the weekend to eat throughout the week for lunch.

Keto Meatballs

Cheesy Keto easy to make meatballs that even picky eaters will enjoy!

  • Large Scooper
  • Baking Dish

Meatballs

  • 2 Pounds Ground Beef (Local Grass Fed Preferred )
  • ½ Cup Grated Parmesan Cheese
  • ¾ Cup Shredded Mozzarella Cheese
  • 1 Free Range Locally Raise Egg
  • 1  Small Onion Finely Grated
  • 6 Garlic Cloves Minced (Less if you don't like Garlic like me! )
  • 1 tbsp Dried Organic Parsley
  • 1 tsp Organic Onion Powder
  • ½ tsp Organic Garlic Powder
  • 1 tsp Organic Italian Seasoning
  • Pink Himalayan Salt & Fresh Ground Pepper to Taste

The Bake

  • 1 jar Roa's Sauce (Roasted Garlic & Tomato Basil are my favorites!)
  • ½ Cup Shredded Mozzarella Cheese (Optional )
  1. Preheat oven to 400 degrees F.

  2. Chop your gralic so it has time to produce allicin

  3. To make the meatballs: In a large bowl combine ground beef, cheeses, egg, onion, garlic, parsley and seasonings, mixing well. Use scoop to form the meatballs so they are all the same size and arrange on a baking dish.

  4. Bake meatballs for 15 minutes, or until almost fully cooked. Remove meatballs, draining any excess grease, and arrange cooked meatballs in a baking dish.

  5. Pour marinara sauce over the meatballs and sprinkle optional cheese on top. Bake in the oven for about 15 minutes until the meetballs read 160 degrees. Be careful to not over cook and dry out the meatballs!

  6. Serve and watch the picky eaters delightfully enjoy your keto meatballs!
